Plumbers and mechanical contractors pressure test after rough-in and before insulation or drywall. Inspectors often witness the test. Air tests are used for gas lines; hydrostatic (water) tests for plumbing.

Rule of Thumb
Standard hydrostatic test holds 1.5x working pressure for a minimum of 2 hours with no pressure drop.
